    EDUCATION:

    • High School Diploma or equivalent
    • Ability to read and write
    • Previous cooking experience preferred

    SAFETY AND SANITATION

    • Keep kitchen in a sanitary condition, including cleaning and proper storage of equipment and appliances
    • Keep floor, walls, vents, hood, windows, counters, etc., clean and in order
    • Carry out duties (food handling, dishwashing) in a sanitary manner
    • Knowledgeable of fire safety and disaster plans
    • Knows location and proper use of fire extinguishers
    • Reports all hazardous situations and broken equipment to the Administrator or designee

    EQUIPMENT AND SUPPLY

    • Follows established safety precautions when performing tasks and when using equipment and supplies
    • Clean equipment properly after use
    • Keeps appropriate individuals informed of supply needs

    PHYSICAL DEMANDS

    The physical demands of this position include lifting up to 50 pounds, standing on feet during entire shift, bending, stooping, reaching, pushing and pulling. While performing the duties of this Job, the employee is regularly exposed to wet and/or humid conditions. The employee is frequently exposed to extreme heat/cold. The noise level in the work environment is usually moderate.

    Summary:

    The Cook is responsible for assisting the Dietary Manager in carrying out responsibilities. Will be in charge in absence of Dietary Manager or Assistant (if applicable). Provides general supervision and support to all food service employees on shift. Maintains knowledge of food sanitation requirements. Prepares nutritional and pleasing meals that meet RDA recommendations, following center practices and menus.

    PRIMARY RESPONSIBILITIES:

    • Prepares/serves meals
    • Prepares food/desserts for noon and evening snacks
    • Prepares substitutions; posts in designated areas
    • Inspects quantity, quality, temperature, and appearance of food before serving
    • Checks leftover foods in walk-in daily; discard all outdated food items, all shifts
    • Maintains foods at correct temperature: tray line – hot 140 degrees, cold 45 degrees – serving – hot 120 degrees, cold 50 degrees
    • Takes food temperature and documents daily, addressing and noted concerns
    • Prepares meals at appropriate times
    • Follows posted meal delivery schedules
    • Has knowledge of proper preparation of foods by following planned menus
    • Knowledge of basic principles of cooking
    • Familiarity with operation of all kitchen equipment
    • Ability to be exact in proper proportioning of food products (correct measurements and portions)
    • Dresses in appropriate uniform and covers hair as required
    • Exhibits appropriate relationships with residents, families, and employees
    • Make independent decisions
    • Handles emergency situations adequately
    • Attend inservices and/or workshops as required
    • Maintain current food handler’s card
    • Keeps all cooking equipment and/or utensils clean and properly stored
    • Communicates effectively with supervisor and other center managers and staff
    • Other duties as assigned

    OVERTIME REQUIREMENT

    Because our residents require assistance around the clock, the ability to work overtime is a requirement for this position and can include Saturdays and Sundays.
