    Job Description


    Job Purpose:

    Prepare, season, and cook dishes such as soups, meats, vegetables, or desserts in restaurants. Able to perform a la carte or line production cooking, grill and saut�; produce finished product to specification from incoming menu order correctly and in an acceptable time frame.

    Job Responsibilities:

    1.

    Inspect and clean food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.

    2.

    Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters.

    3.

    Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, label, date and rotating stock.

    4.

    Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.

    5.

    Butcher and dress animals, fowl, or shellfish, or cut and bone meat prior to cooking.

    6.

    Carve and trim meats such as beef, veal, ham, pork, and lamb for hot or cold service, or for sandwiches.

    7.

    Season and cook food according to recipes or personal judgement and experience.

    8.

    Bake breads, rolls, cakes, and pastries

    9.

    Turn or stir foods to ensure even cooking.

    10.

    Weigh, measure, and mix ingredients according to recipes or personal judgement if recipes are not available using various kitchen utensils and equipment.

    11.

    Portion, arrange, and garnish food, and serve food to waiters or patrons.

    12.

    Prepare relishes and hors d'oeuvres.

    13.

    Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils or utilize thermometer.

    14.

    Substitute for or assist other cooks during emergencies or rush periods.

    15.

    Coordinate and supervise work of kitchen staff in the absence of the Supervisor.

    16.

    Estimate expected food consumption, requisition or purchase supplies, or procure food from storage.

    17.

    Assist Lead with planning and pricing menu items to maintain food cost percentages within guidelines set by budget.

    18.

    Follow safe work practices and established safety procedures including the use of personal protective equipment (PPE).

    19.

    Perform other duties as assigned.

    Job Qualifications:

    Education

    High school Graduate or General Education Degree (GED)

    Experience/Skills

    1 or 2 years related experience.

    Computer Skills

    MicroSoft Office program, Outlook, helpful but not required.

    Licenses/Certificates

    TB Clearance

    Other Requirements

    Able to read, write and communicate in English
