    Job Description


    Will spend most of his time leading, supervising and coordinating all culinary-related processes. Kitchen Manager will estimate food consumption, monitor the food inventory and order supplies accordingly. Under the direction of property management and Aqua Hospitality / Aston Hotels direction, the Kitchen Manager will create and price the restaurant menu, develop new recipe ideas and select items for cooking. Kitchen Manager will participate in planning events, and provides on-the-job training and culinary demonstrations. He/she will provide leadership in establishing high-quality standards in all kitchen operations and ensure the kitchen is compliant with the regulatory requirements for food handling, sanitation and safety

    Essential Functions

    • Develops menus and revises accordingly with guidance from property management and AAH
    • Develops catering menu and customizes menu as necessary with guidance property management and AAH
    • Sets appropriate purchasing specifications
    • Purchases all food and supplies and ensures items are available on a timely basis
    • Obtains fair pricing by using the bidding process
    • Completes all purchasing and inventory records within guidelines
    • Maintains inventory controls
    • Accurately forecasts food production needs
    • Completes all food production records within guidelines
    • Coordinates activities of cooks and other kitchen teammates engaged in preparing and cooking foods
    • Prepares food as needed
    • Develops and standardizes production recipes to ensure consistent quality
    • Develops quality standards for food quality and presentation
    • Checks food quality, presentation, and portion control before meals
    • Ensures maintenance of cooking equipment
    • Maintains a sanitary and safe kitchen/storage environment for all teammates
    • Manages/controls food costs
    • Manages/controls labor cost
    • Prepares budgets in consultation with General Manager, Restaurant Manager and VP of Food and Beverage
    • Supervises and motivates kitchen teammates
    • Interviews and hires kitchen teammates
    • Trains kitchen teammates
    • Evaluates kitchen teammates performance
    • Serves as a role model for the kitchen teammates through teamwork support, attention to detail, quality control, and interactions with guests and teammates
    • Ensures guest satisfaction
    • Ensures that teammates receive fair and consistent treatment and opportunity to advance

    Support

    • Must have a comprehensive knowledge of the English language to effectively communicate with guests, associates, and vendors.
    • Ability to assist with the design and preparation of statistical reports and presentations as needed.
    • Ability to accurately report information.
    • Ability to assist with various office tasks as needed.
    • Ability to scrupulously follow all AAH and hotel policies and procedures.

    Qualification Standards

    Additional responsibilities specific to you are:

    • Must have a comprehensive knowledge of all hotel departments and functions.
    • Must have a comprehensive knowledge of applicable Federal, state, and local health, safety, and legal regulations.
    • Servsafe Certified.
    • Must have exceptional mathematical and computer skills.
    • Ability to timely obtain any required licenses or certificates.
    • CPR training required; first aid training preferred.
    • Associate's degree (A.A.) or equivalent from two-year College or technical school
    • Five years minimum related experience in a high-volume restaurant
